Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 small zucchini, spiralized (zoodled)
  • 1 small yellow squash, spiralized (zoodled)
  • 1 cup baby spinach, chopped
  • 3 large eggs, whisked
  • Salt and pepper, to taste
  • Parsley, for garnish (optional)

Directions

  1. Heat the olive oil in a medium skillet over medium-high heat.
  2. Add the onion and cook for 2-3 minutes until softened.
  3. Add the zucchini and squash noodles and cook for 3-4 minutes until softened.
  4. Add the spinach and cook for 1-2 minutes until wilted.
  5. Pour in the whisked eggs and season with salt and pepper.
  6. Cook for 3-4 minutes, stirring occasionally, until the eggs are cooked through.
  7. Garnish with parsley, if desired, and serve warm.
