Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 2 cups diced cooked chicken
  • 3 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup uncooked egg noodles
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook for about 5 minutes, stirring occasionally, until the onion is softened.
  3. Add the oregano, thyme, basil, and black pepper and cook for another minute.
  4. Add the chicken, broth, carrots, and celery to the pot and bring the mixture to a boil.
  5. Reduce the heat to low and simmer for 15 minutes.
  6. Add the egg noodles to the soup and simmer for another 15 minutes, or until the noodles are cooked through.
  7. Stir in the parsley and season with salt and pepper, to taste.
  8. Serve hot.
