Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 8 ounces shiitake mushrooms, sliced
  • 8 ounces oyster mushrooms, sliced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • 1 bay leaf
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup frozen peas
  • Salt and pepper to taste

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic. Saute until onions become translucent.
  3. Add sliced cremini, shiitake, and oyster mushrooms. Stir well to coat the mushrooms in the oil.
  4. Cook until mushrooms release their water and start to brown, around 8-10 minutes.
  5. Add fresh thyme, rosemary, and bay leaf to the pot. Stir to combine.
  6. Add diced carrots, celery, and red bell pepper. Cook for 5 minutes, until vegetables start to soften.
  7. Pour in vegetable broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat to low.
  8. Cover the pot and simmer for 15-20 minutes, until the vegetables are tender.
  9. Add frozen peas to the stew. Stir well and continue cooking for another 5 minutes.
  10. Season with salt and pepper to taste.
  11. Remove the bay leaf before serving.
