Ingredients
- 2 pounds lamb stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 potatoes, peeled and diced
- 1 can diced tomatoes
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Directions
- In a large pot, heat olive oil over medium heat. Add the lamb stew meat and brown on all sides, about 5 minutes.
- Add the onion and garlic to the pot and cook until softened, about 5 minutes.
- Stir in the carrots, celery, and potatoes, and cook for another 5 minutes.
- Add the diced tomatoes, beef broth, thyme, rosemary, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot with crusty bread.
