Ingredients
- 2 lbs beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 3 potatoes, peeled and cubed
- 2 celery stalks, sliced
- 1 cup frozen peas
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Directions
- In a large pot, heat olive oil over medium heat.
- Add beef stew meat and brown on all sides. Remove from pot and set aside.
- Add onion and garlic to the pot and sauté until fragrant.
- Return beef to the pot and add carrots, potatoes, celery, peas, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Bring the stew to a boil, then reduce heat to low and simmer for 1.5 hours, stirring occasionally.
- Taste and adjust seasoning if necessary.
