Ingredients

  • 2 pounds of stew beef, cut into chunks
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 carrots, peeled and chopped
  • 3 potatoes, peeled and diced
  • 1 cup of frozen peas
  • 1 can of diced tomatoes
  • 4 cups of beef broth
  • 1/2 cup of red wine
  • 2 tablespoons of tomato paste
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste

Directions

  1. In a large pot, brown the stew beef over medium-high heat until browned on all sides. Remove from pot and set aside.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Return the beef to the pot and add the carrots, potatoes, peas, tomatoes, beef broth, red wine, tomato paste, thyme, rosemary, salt, and pepper.
  4. Bring the stew to a boil, then reduce heat to low and simmer for 1-2 hours, stirring occasionally.
  5. Taste and adjust seasoning as needed. Serve hot with crusty bread for dipping.
