Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups water
  • 3 large potatoes, peeled and diced
  • 1 bunch kale, stems removed and leaves chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Juice of 1 lemon

Directions
