Ingredients

  • 1 cup nut butter (peanut, almond, cashew, etc.)
  • 1/2 cup pitted dates
  • 1/2 cup coconut flakes
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  1. In a food processor, combine the nut butter, dates, coconut flakes, honey, vanilla extract, and salt. Process until the ingredients are combined and a thick dough forms.
  2. Roll the dough into 1-inch balls. Place the balls on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the freezer for 20 minutes to allow the truffles to set.
  4. Once set, transfer the truffles to an airtight container and store in the fridge for up to one week.
