Ingredients

  • 3 cups chopped rhubarb
  • 3 cups sliced peaches
  • 1/2 cup light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/2 cup rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup butter, melted
  • Vanilla ice cream, for serving (optional)

Directions

  1. Preheat oven to 375°F.
  2. In a large bowl, combine rhubarb, peaches, sugar, flour, cinnamon, nutmeg, ginger, and allspice. Stir until blended.
  3. In a medium bowl, combine oats, walnuts, and melted butter. Stir until blended.
  4. Spoon rhubarb-peach mixture into a 9 x 9-inch baking dish. Sprinkle oat-nut mixture over rhubarb-peach mixture.
  5. Bake for 25 minutes, or until golden brown and bubbly.
  6. Serve warm with ice cream, if desired.
