Ingredients
- 3 cups chopped rhubarb
- 3 cups sliced peaches
- 1/2 cup light brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/2 cup rolled oats
- 1/2 cup chopped walnuts
- 1/4 cup butter, melted
- Vanilla ice cream, for serving (optional)
Directions
- Preheat oven to 375°F.
- In a large bowl, combine rhubarb, peaches, sugar, flour, cinnamon, nutmeg, ginger, and allspice. Stir until blended.
- In a medium bowl, combine oats, walnuts, and melted butter. Stir until blended.
- Spoon rhubarb-peach mixture into a 9 x 9-inch baking dish. Sprinkle oat-nut mixture over rhubarb-peach mixture.
- Bake for 25 minutes, or until golden brown and bubbly.
- Serve warm with ice cream, if desired.
