Ingredients
- 2 small squash
- 1/2 cup dates, chopped
- 1/2 cup onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Directions
- Preheat oven to 375°F (190°C).
- Cut squash in half and scoop out the seeds.
- In a mixing bowl, combine dates, onion, olive oil, oregano, garlic powder, salt, and pepper. Mix well.
- Place squash halves in a greased baking dish. Fill each squash half with the date and onion mixture.
- Bake for 25 minutes, or until squash is tender.
- Serve hot.
