Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes
- 4 cups vegetable broth
- 2 (15 ounce) cans black beans, drained and rinsed
- 1 cup quinoa, rinsed
- 1/2 cup corn
- 1/2 cup chopped cilantro
- salt and pepper to taste
Directions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until they are softened, about 5 minutes.
- Add the jalapeno, chili powder, cumin, smoked paprika, and cayenne pepper and cook for 1 minute.
- Add the diced tomatoes and vegetable broth and bring the soup to a boil.
- Reduce the heat to low and add the black beans, quinoa, and corn. Simmer for 20 minutes, until the quinoa is cooked through.
- Stir in the cilantro and season with salt and pepper to taste.
- Serve the soup hot.
