Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 4 cups vegetable broth
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 cup quinoa, rinsed
  • 1/2 cup corn
  • 1/2 cup chopped cilantro
  • salt and pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until they are softened, about 5 minutes.
  2. Add the jalapeno, chili powder, cumin, smoked paprika, and cayenne pepper and cook for 1 minute.
  3. Add the diced tomatoes and vegetable broth and bring the soup to a boil.
  4. Reduce the heat to low and add the black beans, quinoa, and corn. Simmer for 20 minutes, until the quinoa is cooked through.
  5. Stir in the cilantro and season with salt and pepper to taste.
  6. Serve the soup hot.
