Ingredients

  • 1 head of cauliflower, chopped into small florets
  • 3 eggs
  • 1/2 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Oil for frying

Directions

  1. In a large bowl, mix together the cauliflower florets, eggs, flour, garlic powder, cumin, chili powder, coriander, salt, and pepper until everything is evenly combined.
  2. Heat a large skillet over medium-high heat and add enough oil to cover the bottom. Once the oil is hot, spoon about 1/4 cup of the cauliflower mixture into the pan for each pancake. Fry for about 3-4 minutes per side, or until golden brown and crispy.
  3. Transfer the pancakes to a plate lined with paper towels to absorb any excess oil. Serve with a dollop of sour cream or yogurt and enjoy!
