Ingredients
- 1 tablespoon olive oil
- 1 lb. ground beef
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 (14.5-ounce) can diced tomatoes, drained
- 1/4 cup chopped fresh cilantro
- 4 large bell peppers, cut into rings
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F.
- Heat oil in a large skillet over medium-high heat. Add ground beef, garlic, chili powder, and cumin. Cook until beef is cooked through and lightly browned, about 8 minutes.
- Add tomatoes and cilantro to the skillet and cook for 3 minutes more. Remove from heat and season with salt and pepper, to taste.
- Spray a baking sheet with non-stick cooking spray.
- Arrange bell pepper rings on the baking sheet. Place a spoonful of the beef mixture inside each pepper ring. Top with cheese.
- Bake in preheated oven for 10-15 minutes, or until cheese is melted and bubbly.
