Ingredients

  • 2 cups cooked and shredded chicken
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno, diced
  • 1/2 cup diced onion
  • 1/2 cup black beans
  • 1/2 cup corn
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 3/4 cup enchilada sauce
  • 6-8 flour or corn tortillas
  • 2/3 cup shredded cheese

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a large bowl, combine the chicken, bell peppers, jalapeno, onion, black beans, corn, garlic, chili powder, cumin, oregano, salt, and pepper. Stir until everything is combined.
  3. In a separate bowl, mix together the sour cream and enchilada sauce. Set aside.
  4. To assemble the enchiladas, spread about 2 tablespoons of the sour cream mixture onto each tortilla. Top with a scoop of the chicken mixture and a sprinkle of cheese. Roll up the tortilla and place it seam side down in a greased baking dish.
  5. Once all of the enchiladas are assembled, pour the remaining sour cream mixture over the top. Sprinkle with additional cheese, if desired.
  6. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and the enchiladas are heated through.
  7. Serve hot.
