Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut flakes
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine the mashed bananas, coconut oil, brown sugar, eggs and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the coconut flakes and chocolate chips.
  6. Spoon the batter into paper-lined or greased muffin tins, filling each 3/4 full.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
