Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cups chicken broth
- 2 smoked turkey wings
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large stockpot over medium heat.
- Add the onion, garlic, carrots, and celery and sauté for 5 minutes, stirring occasionally.
- Add the chicken broth, smoked turkey wings, bay leaf, thyme, and smoked paprika. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
- Remove the turkey wings from the soup and shred the meat with two forks. Discard the bones.
- Return the shredded turkey meat to the soup and simmer an additional 20 minutes.
- Season with salt and pepper, to taste.
- Serve warm.
