Ingredients

  • 1 medium cauliflower head
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced

  • 1 carrot, julienned
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 8 ounces tofu, cubed
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Directions

  1. Remove the leaves and core of the cauliflower head. Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower has a rice-like consistency.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and diced onion, and cook until fragrant and slightly golden.
  3. Increase the heat to medium-high and add the sliced bell pepper, julienned carrot, snap peas, and broccoli florets to the skillet. Stir fry for 2-3 minutes, until the vegetables are slightly tender.
  4. Push the vegetables to one side of the skillet and add the remaining tablespoon of vegetable oil. Add the cubed tofu to the skillet and cook until lightly browned on all sides.
  5. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, grated ginger, and red pepper flakes (if using). Pour the sauce over the vegetables and tofu, and stir to coat everything evenly.
  6. Add the cauliflower rice to the skillet and stir fry for an additional 3-4 minutes, until the cauliflower is cooked through but still slightly crisp. Season with salt and pepper to taste.
