  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups chopped rhubarb
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, and then add the vanilla extract.
  5. Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the chopped rhubarb and walnuts, if desired.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
