Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup old-fashioned rolled oats
  • 1/4 cup finely chopped crystallized ginger

Directions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter and both sugars until light and fluffy, about 3 minutes. Beat in the egg and vanilla.
  4. Add the flour mixture in three batches, beating until just combined. Stir in the oats and ginger.
  5. Drop the cookie dough by heaping tablespoons onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each cookie slightly with the palm of your hand.
  6. Bake for 12 to 15 minutes, or until lightly golden. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
