- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 3/4 cup old-fashioned rolled oats
- 1/4 cup finely chopped crystallized ginger
Directions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the butter and both sugars until light and fluffy, about 3 minutes. Beat in the egg and vanilla.
- Add the flour mixture in three batches, beating until just combined. Stir in the oats and ginger.
- Drop the cookie dough by heaping tablespoons onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each cookie slightly with the palm of your hand.
- Bake for 12 to 15 minutes, or until lightly golden. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
