Preheat the oven to 350°F (175°C). Grease a baking sheet.
In a medium saucepan, melt the butter over medium heat. Add the sugar and honey and stir until combined. Remove from heat and stir in the flour, salt, and nuts.
Drop the dough by the teaspoonful onto the prepared baking sheet. Bake for 10 minutes, or until lightly golden. Cool completely.
Melt the chocolate chips in a double boiler over low heat. Dip the cooled Florentines in the melted chocolate and place on waxed paper to set.
