Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 pound potatoes, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups kale, chopped
  • 1/2 cup heavy cream

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic, and cook until the onions are softened, about 5 minutes.
  3. Add the vegetable broth, potatoes, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low and simmer for 15 minutes, until the potatoes are tender.
  5. Add the kale and simmer for 5 more minutes.
  6. Stir in the cream and cook until heated through.
  7. Serve hot.
