Ingredients

  • 1 head of lettuce, chopped
  • 1 can of black beans, rinsed and drained
  • 1 can of sweet corn, drained
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/2 cup of cheddar cheese, shredded
  • 1/4 cup of fresh cilantro, finely chopped
  • 1/2 cup of salsa
  • 1/4 cup of olive oil
  • 2 tablespoons of lime juice
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Tortilla chips for serving (optional)

Directions

  1. In a large bowl, combine the lettuce, black beans, corn, bell peppers, jalapeno pepper, cheddar cheese, and cilantro.
  2. In a small bowl, whisk together the salsa, olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve the salad with tortilla chips, if desired.
