Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 cup uncooked long-grain white rice
  • 1/2 cup frozen baby peas
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic, and cook until softened, about 5 minutes.
  3. Add the ground turkey, oregano, basil, and black pepper. Cook, stirring occasionally, until the turkey is browned, about 8 minutes.
  4. Add the chicken broth, carrots, celery, and rice. Bring the mixture to a boil, then reduce the heat and simmer, stirring occasionally, for 20 minutes.
  5. Stir in the frozen peas and cook for 5 minutes more.
  6. Stir in the fresh parsley and serve.
