Grilled Garlic Artichokes

Ingredients

  • 4 large artichokes
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Cut off the stem and the top of each artichoke and discard.
  2. Cut the artichokes in half lengthwise and remove the choke.
  3. Place the artichoke halves in a large bowl.
  4. In a separate bowl, whisk together the garlic, olive oil, lemon juice, oregano, salt and pepper.
  5. Pour the marinade over the artichoke halves and toss to coat.
  6. Preheat your grill to medium-high heat.
  7. Place the artichoke halves on the grill and cook for about 10 minutes, flipping once, until the artichokes are tender and lightly charred.
  8. Serve warm.
