Grilled Arctic Char on a bed of Greens

Ingredients

  • 1 lb Arctic Char, deboned and cut into four even pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons freshly chopped parsley
  • 1 head of romaine lettuce, chopped
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • 2 tablespoons balsamic vinegar

Directions

  1. Heat a grill or grill pan over medium-high heat.
  2. Rub the arctic char with olive oil and season with salt, pepper, garlic powder, and parsley.
  3. Grill the arctic char for 3-4 minutes per side, until cooked through.
  4. In a large bowl, combine the romaine lettuce, avocado, cherry tomatoes, feta cheese, and almonds.
  5. Drizzle with balsamic vinegar and toss to combine.
  6. Divide the salad among four plates and top each plate with a piece of grilled arctic char.
  7. Serve immediately.
