Ingredients
- 1 lb Arctic Char, deboned and cut into four even pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons freshly chopped parsley
- 1 head of romaine lettuce, chopped
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds
- 2 tablespoons balsamic vinegar
Directions
- Heat a grill or grill pan over medium-high heat.
- Rub the arctic char with olive oil and season with salt, pepper, garlic powder, and parsley.
- Grill the arctic char for 3-4 minutes per side, until cooked through.
- In a large bowl, combine the romaine lettuce, avocado, cherry tomatoes, feta cheese, and almonds.
- Drizzle with balsamic vinegar and toss to combine.
- Divide the salad among four plates and top each plate with a piece of grilled arctic char.
- Serve immediately.
