Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar

Directions
In a medium bowl, whisk together the flour, baking powder, and baking soda.
In a large bowl, beat the butter and sugar together with an electric mixer until light and fluffy.
Beat in the eggs, one at a time, then stir in the vanilla and salt.
Add the flour mixture to the butter mixture and stir until combined.
Divide the dough into two discs and wrap each in plastic wrap. Refrigerate for 1 hour.
Preheat the oven to 350°F (177°C). Line two baking sheets with parchment paper.
Unwrap one of the discs of dough and place it on a lightly floured work surface. Roll the dough out to a 1/4-inch (6 mm) thickness.
Cut out cookies with desired cookie cutter and place 1 inch apart on prepared baking sheets.
Bake for 8 to 10 minutes, until lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Repeat with the remaining disc of dough.
