Ingredients

  • 1/2 cup white sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/2 teaspoon lemon juice
  • Peel of one lemon and one orange, cut into thin strips

Directions

  1. In a medium-sized saucepan, stir together the sugar, corn syrup, and water. Bring to a boil over medium-high heat, stirring constantly.
  2. Add the lemon juice and reduce the heat to medium-low. Simmer for about 10 minutes, stirring occasionally, until the mixture thickens.
  3. Add the citrus peel strips and simmer for an additional 10-15 minutes, stirring occasionally, until the peels are translucent.
  4. Remove the pan from the heat and allow the peels to cool in the syrup for about 10 minutes.
  5. Using a slotted spoon, remove the peels from the syrup and spread them on a parchment-lined baking sheet.
  6. Allow the peels to cool and dry for at least 1 hour before serving.
