Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt; set aside.
  3. In a large bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in eggs and vanilla extract until well combined.
  4. Gradually mix in dry ingredients until dough is smooth.
  5. In a small bowl, mix together 2 tablespoons sugar and cinnamon. Roll dough into 1-inch balls and roll in cinnamon-sugar mixture.
  6. Place balls 2 inches apart on prepared baking sheets. Bake in preheated oven for 8 to 10 minutes.
  7. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
