Ingredients

  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 2 cups corn flakes

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, cream together the butter, peanut butter and sugar until smooth.
  3. Beat in the egg, vanilla, and baking soda.
  4. Stir in the flour until blended, then stir in the corn flakes.
  5. Drop by teaspoonfuls (or use a cookie scoop) onto ungreased cookie sheets.
  6. Bake for 8 to 10 minutes in the preheated oven, or until lightly golden.
  7. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
