Ingredients

  • 1 cup of gluten-free all-purpose flour
  • 1/2 cup of almond flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 cup of coconut oil, melted
  • 1/4 cup of maple syrup
  • 2 eggs
  • 1/4 cup of almond milk
  • 1 teaspoon of vanilla extract
  • 1/2 cup of dark chocolate chips

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin.
  2. In a large bowl, combine the gluten-free all-purpose flour, almond flour, baking powder, and salt and mix until combined.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, eggs, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the dark chocolate chips.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool before serving.
