- 1 cup of gluten-free all-purpose flour
- 1/2 cup of almond flour
- 1 teaspoon of baking powder

- 1/4 cup of coconut oil, melted
- 1/4 cup of maple syrup

Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin.
- In a large bowl, combine the gluten-free all-purpose flour, almond flour, baking powder, and salt and mix until combined.
- In a separate bowl, whisk together the melted coconut oil, maple syrup, eggs, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in the dark chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
