Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup cold unsalted butter, cut into small cubes
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

Directions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, and salt.
  3. Add the butter cubes and, using a pastry blender or your fingers, mix until the mixture resembles coarse crumbs.
  4. Stir in the vanilla and almond extract.
  5. Knead the dough until it comes together. Divide the dough in half.
  6. Roll each half of the dough into a log about 1 1/2 inches (4 cm) in diameter.
  7. Using a sharp knife, cut the log into 1/2-inch (1 cm) thick slices. Place the slices on the prepared baking sheet.
  8. Bake in preheated oven for 12-15 minutes or until golden brown.
  9. Remove from oven and let cool on baking sheet for 5 minutes. Transfer to a wire rack to cool completely.
