Ingredients
1 large eggplant, sliced into 1/4-inch thick slices
1/2 cup ricotta cheese
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 slices of your favorite sandwich bread
4 slices of your favorite cheese
Directions
Preheat the oven to 350°F (175°C).
Lay the eggplant slices on a baking sheet and brush them with the olive oil. Sprinkle with the oregano, garlic powder, salt, and pepper.
Bake in the preheated oven for 10 minutes, or until the eggplant is tender.
Spread the ricotta cheese on two slices of the bread.
Top the ricotta with the eggplant slices and the cheese slices.
Top with the remaining two slices of bread.
Heat a large skillet over medium heat and add the sandwiches.
Cook for about 3 minutes per side, or until golden brown and the cheese has melted.
Serve hot and enjoy!
