Ingredients
- 1 large eggplant, sliced into 1/4-inch thick slices
- 1/2 cup ricotta cheese
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 4 slices of your favorite sandwich bread
- 4 slices of your favorite cheese
Directions
- Preheat the oven to 350°F (175°C).
- Lay the eggplant slices on a baking sheet and brush them with the olive oil. Sprinkle with the oregano, garlic powder, salt, and pepper.
- Bake in the preheated oven for 10 minutes, or until the eggplant is tender.
- Spread the ricotta cheese on two slices of the bread.
- Top the ricotta with the eggplant slices and the cheese slices.
- Top with the remaining two slices of bread.
- Heat a large skillet over medium heat and add the sandwiches.
- Cook for about 3 minutes per side, or until golden brown and the cheese has melted.
- Serve hot and enjoy!
