Ingredients
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 3 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes, with juice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- salt and pepper, to taste
Directions
- In a large pot, heat the olive oil over medium-high heat.
- Add the onion, garlic, and red pepper. Cook until the vegetables start to soften, about 5 minutes.
- Add the cumin, coriander, paprika, turmeric, ginger, and cinnamon. Stir to combine.
- Add the vegetable broth, chickpeas, and tomatoes with juice. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the parsley and cilantro. Simmer for an additional 5 minutes.
- Taste and adjust the seasonings with salt and pepper, if needed.
- Serve with a sprinkle of fresh herbs, if desired.
