Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a medium bowl, combine the apples, caramel sauce, brown sugar, butter, cinnamon, nutmeg, ginger, and salt. Mix until all ingredients are evenly distributed. Spread the mixture into the prepared baking dish.
In a large bowl, whisk together the cream, milk, eggs, sugar, and vanilla extract. Pour the mixture over the apples in the baking dish.
Sprinkle the graham cracker crumbs over the top of the custard and bake for 25 to 30 minutes, or until custard is set and the top is golden brown.
Allow to cool before serving.
