  • 1 1/2 cup of whole wheat flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 2 tablespoons of melted coconut oil
  • 1/2 cup of pure maple syrup
  • 2 large eggs
  • 1 teaspoon of pure vanilla extract
  • 2 cups of shredded zucchini
  • 1/2 cup of chopped walnuts (optional)
  • 1/2 cup of raisins (optional)


  1. Preheat oven to 350°F (175°C). Grease a 8x4 inch loaf pan with baking spray and set aside.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until combined.
  3. In a medium bowl, whisk together the melted coconut oil, maple syrup, eggs, and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the shredded zucchini, walnuts, and raisins (if using).
  6. Transfer the batter to the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
