Ingredients

  • 1 cup mung bean sprouts
  • 2 green onions, chopped
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup water

Directions

  1. In a medium bowl, combine the mung bean sprouts, green onions, ginger, soy sauce, sesame oil, salt, and pepper. Set aside.
  2. Heat 2 tablespoons of the vegetable oil in a skillet over medium-high heat. Add the mung bean sprouts mixture and cook for 3 minutes, stirring often.
  3. In a small bowl, whisk together the eggs, flour, baking powder, water, and remaining 2 tablespoons vegetable oil. Pour the batter over the mung bean sprouts mixture in the skillet and cook for 2 minutes.
  4. Flip the pancake over and cook for an additional 2 minutes. Serve hot.
