Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (14.5 ounce) can vegetable broth
  • 1 (14.5 ounce) can chickpeas, drained and rinsed
  • 1 (14.5 ounce) can diced potatoes, drained
  • 1/2 cup frozen peas
  • 1/4 cup cilantro, chopped
  • Salt, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the ginger, curry powder, cumin, coriander, turmeric, cardamom, cinnamon, pepper, and nutmeg and cook for 2 minutes.
  4. Add the tomatoes, broth, chickpeas, potatoes, and peas and bring to a boil.
  5. Reduce the heat to low and simmer for 15 minutes.
  6. Stir in the cilantro and season to taste with salt.
  7. Serve hot and enjoy!
