1 (15-ounce) can black-eyed peas, drained and rinsed
1 (14-ounce) can diced tomatoes, drained
1 (7-ounce) jar roasted red peppers, drained and chopped
1 (2.25-ounce) can sliced black olives, drained
1/4 cup chopped fresh parsley
3 cups cooked rotini pasta
Directions
In a medium bowl, whisk together the olive oil, red wine vinegar, garlic powder, oregano, onion powder, paprika, black pepper, and salt until combined.
In a large bowl, combine the black-eyed peas, tomatoes, roasted red peppers, olives, and parsley. Stir to combine.
Add the cooked rotini pasta and the vinaigrette to the bowl and stir until all the ingredients are evenly coated.
