Ingredients
- 2 pounds potatoes, peeled and cut into 1-inch cubes
- 3 cloves garlic, minced
- 1 onion, diced
- 3 tablespoons olive oil
- 2 teaspoons rosemary, chopped
- Salt and pepper, to taste
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine potatoes, garlic, onion, olive oil, rosemary, salt and pepper. Toss to coat.
- Transfer potatoes to a baking sheet and spread into an even layer.
- Bake in preheated oven for 40 minutes, stirring once halfway through cooking, until potatoes are golden brown and tender.
