Ingredients

  • 2-3 lbs. pork shoulder, cut into cubes
  • 1/2 cup balsamic vinegar
  • 1/2 cup brown sugar
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup fresh blueberries

Directions

  1. In a large bowl, combine the balsamic vinegar, brown sugar, olive oil, garlic, salt, pepper, chili powder, smoked paprika, garlic powder, and onion powder. Mix until well combined.
  2. Add the pork cubes to the bowl and mix until they are evenly coated with the marinade.
  3. Cover the bowl with plastic wrap and place in the refrigerator to marinate for at least 2 hours, or overnight.
  4. Preheat the oven to 350 degrees.
  5. Remove the pork cubes from the marinade and place them in a greased 9x13 inch baking dish.
  6. Pour the marinade over the pork and sprinkle the blueberries over the top.
  7. Cover the dish with foil and bake for 2 hours, or until the pork is cooked through and tender.
  8. Remove the pork from the oven and shred with two forks. Stir in any remaining juices from the baking dish.
  9. Serve the shredded pork with your favorite sides and enjoy!
