Rotisserie Chicken
Ingredients
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 egg whites
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1 cup fresh raspberries
Directions
Preheat oven to 300 degrees F (150 degrees C).
In a medium bowl, beat egg whites until frothy. Add cream of tartar, salt and vanilla extract. Beat until soft peaks form.
Gradually add sugar, one tablespoon at a time. Beat until stiff peaks form and sugar is dissolved.
Spread meringue onto a baking sheet lined with parchment paper. Form into a 9-inch circle.
Bake for 25 minutes. Reduce heat to 250 degrees F (120 degrees C) and continue baking for 20 minutes. Turn off oven and let meringue cool in oven.
Top with fresh raspberries and serve.
