Preheat oven to 350°F. Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, butter, and 1/4 cup of the sugar. Mix until crumbly. Press into the bottom of the prepared pan and bake for 10 minutes. Remove from oven and let cool.
In a large bowl, combine cream cheese, remaining 1/2 cup sugar, and vanilla extract. Beat until smooth. Add eggs one at a time, mixing until just blended. Pour onto cooled crust.
Sprinkle Fruity Pebbles cereal over the top of the cheesecake. Bake for 40 minutes, or until center is almost set. Cool on a wire rack for 10 minutes, then chill in the refrigerator for at least an hour before serving.
