Ingredients

  • 1/2 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 cup cooked corn
  • Oil for frying

Directions

  1. In a large bowl, combine the cornmeal, flour, baking powder, and salt. Stir until combined.
  2. In a separate bowl, whisk together the milk, melted butter, and egg. Add the wet ingredients to the dry ingredients and stir until just combined.
  3. Fold in the cooked corn.
  4. Heat the oil in a large skillet over medium heat.
  5. Drop the batter by tablespoonfuls into the hot oil. Fry for 3-4 minutes, flipping once, until golden brown.
  6. Remove from the oil and drain on paper towels.
  7. Serve warm with butter and honey.
