3 ripe bananas, peeled and sliced into 1/2-inch thick slices
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 cup coconut milk
1/4 cup sugar
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 cup vegetable oil
Directions
In a medium bowl, combine the flour, cinnamon, coconut milk, sugar, ginger, and salt. Mix until fully combined.
Heat the oil in a large skillet over medium-high heat. Dip the banana slices into the batter and gently place into the hot oil. Fry for 2-3 minutes, flipping once, until golden brown and crispy.
Remove the fried bananas from the oil and place on a plate lined with paper towels to absorb the excess oil.
Serve immediately with ice cream or other desired toppings.
