Ingredients

  • 3 ripe bananas, peeled and sliced into 1/2-inch thick slices
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup coconut milk
  • 1/4 cup sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil

Directions

  1. In a medium bowl, combine the flour, cinnamon, coconut milk, sugar, ginger, and salt. Mix until fully combined.
  2. Heat the oil in a large skillet over medium-high heat. Dip the banana slices into the batter and gently place into the hot oil. Fry for 2-3 minutes, flipping once, until golden brown and crispy.
  3. Remove the fried bananas from the oil and place on a plate lined with paper towels to absorb the excess oil.
  4. Serve immediately with ice cream or other desired toppings.
