Ingredients
1 tablespoon olive oil
1/2 cup diced onion
1 bunch asparagus, chopped
2 cups smoked salmon, diced
6 eggs
1/2 teaspoon dried thyme
Salt and pepper to taste
1/4 cup grated Parmesan cheese
Directions
Preheat oven to 350F.
Heat the olive oil in a large ovenproof skillet over medium heat.
Add the onion and cook until softened, about 5 minutes.
Add the asparagus and smoked salmon and cook until the asparagus is tender, about 5 minutes.
In a large bowl, whisk together the eggs, thyme, salt and pepper.
Stir in the Parmesan cheese and pour the egg mixture into the skillet.
Cook until the edges of the frittata are set, about 5 minutes.
Transfer the skillet to the oven and bake for 20 minutes, or until the center is set.
Let cool for 5 minutes before serving.
