Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 (15-ounce) cans white beans, drained and rinsed
  • 1 (14-ounce) can diced tomatoes
  • 1 (4-ounce) can diced green chiles
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Optional garnishes: shredded cheese, diced onion, diced avocado, sour cream, fresh cilantro

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground turkey and onion and cook until the turkey is cooked through, about 5 minutes.
  2. Add the garlic and spices and cook until fragrant, about 1 minute.
  3. Add the beans, tomatoes, green chiles, and chicken broth and stir to combine. Bring the mixture to a boil and then reduce heat to low. Simmer for 25 minutes, stirring occasionally.
