In a large bowl, combine the yeast, warm water, and sugar. Stir gently and let sit for 5 minutes until the yeast is activated and foamy.
Add the olive oil, 3 cups of flour, salt, Italian seasoning, and rosemary. Stir until the dough comes together, adding additional flour if needed.
Turn the dough out onto a floured surface and knead for 5 minutes until it’s smooth and elastic.
Place the dough in a lightly oiled bowl and cover with a damp towel. Let rise in a warm place for about 1 hour or until doubled in size.
Preheat oven to 400F (200C). Grease a 9-inch (23cm) round baking pan with olive oil and set aside.
Punch down the dough and place it in the prepared pan. Using your fingers, press the dough out evenly into the pan and brush with 2 tablespoons of olive oil.
Sprinkle the top with sea salt and let rise for 15 minutes.
Bake for 25-30 minutes or until golden brown.
Remove from oven and cool before serving.
