Kale, Avocado and Black Bean Salad

Ingredients

  • 1 bunch of kale
  • 1 avocado
  • 1 can of black beans
  • 1 tomato
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 teaspoon of honey
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Directions

  1. Wash and dry the kale. Remove the stems and chop into small pieces.
  2. In a large bowl, combine the chopped kale, avocado, black beans and tomato.
  3. In a small bowl, whisk together the olive oil, white wine vinegar, honey, Dijon mustard, salt and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve the salad immediately or refrigerate until ready to serve.
