Ingredients

  • 1 (3-5 pound) boneless pork loin roast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup light brown sugar, packed
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes

Directions

  1. In a small bowl, combine the garlic powder, onion powder, paprika, oregano, thyme, and pepper. Rub the mixture all over the pork loin roast.
  2. In a medium bowl, whisk together the brown sugar, soy sauce, Worcestershire sauce, oil, garlic, and parsley.
  3. Place the sweet potatoes in the bottom of a slow cooker.
  4. Place the pork roast on top of the potatoes and pour the sauce over the roast.
  5. Cover and cook on low for 6 to 8 hours, or until the pork is cooked through and the potatoes are tender.
  6. Serve the pork with the potatoes and sauce.
