Garlic-Loves-Roasted-Cabbage
Ingredients
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
2 jalapeno peppers, seeded and diced
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 cans (15 ounces each) black beans, drained and rinsed

3 cups vegetable broth
1/2 cup chopped fresh cilantro
Directions
Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook until the onion is softened, about 5 minutes.
Add the jalapeno peppers, cumin, oregano, chili powder, salt, and pepper. Cook, stirring, for 1 minute.
Add the beans, tomatoes, and broth. Bring to a boil, reduce the heat, and simmer for 20 minutes.
Stir in the cilantro and serve.
