Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 jalapeno peppers, seeded and diced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cans (15 ounces each) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes with green chilies, undrained
  • 3 cups vegetable broth
  • 1/2 cup chopped fresh cilantro

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook until the onion is softened, about 5 minutes.
  2. Add the jalapeno peppers, cumin, oregano, chili powder, salt, and pepper. Cook, stirring, for 1 minute.
  3. Add the beans, tomatoes, and broth. Bring to a boil, reduce the heat, and simmer for 20 minutes.
  4. Stir in the cilantro and serve.
